AxisVenisonPork burgers
my nephew gave me some ground Axis venison
1# of Axis mixed with 1# of ground pork
and appropriate burger seasonings
I have a patty mold
the 2#s made 9 nice patties
very tasty

Capt'n done cooked the "spots" right off that Booger and replaced it with some great grill marks that he is known for.

I've probably seen hundreds of Axis. I've eaten absolutely none. Would love to try it one day. How is it compared to whitetail?

I've had elk once before and that was pretty darn good. Guess I'll have to see about bagging some Axis. Lol! If memory serves me right, they're open season since they're an invasive species?
