Thinking of my Dad this morning and of the story he told of the Phillipino Waitresses and their Omellet'oes. This one was a mix and butter fry in the skillet with one flip.
Ingredients:
chopped and browned Ham from Saturday
one Cackle Berry
grated Pepper Jack
a good dusting of Suckle Busters Texas Chipotle Gunpowder
S&P
generous helping of smoked Salsa ala OUP

Mix altogether and dump into a well buttered and heated skillet
Cover with lid and slowly fry flipping once
Buttered toast for a side
(I will do this again and soon)

Looks great! On my wife's and my new diet we eat a lot off eggs. I think we will do an omelet one night this week. Thanks for the idea.

Yes to both. We don't have scales to track weight loss but my breaches and belt say I have lost some.

Breaches don't lie, that is, except mine and the waist on my Breaches has a habit of shrinking lately :dont: - - - the reason I asked about the cheeses was my favorite ABT filling is slowly becoming cream chez and SB's Pepper Jelly mixed to desired taste. :tup:

Very nice! We do southwest omelettes pretty frequently. Jalapeño, onion, red bell pepper, jack cheese, chili. Good stuff, sir!
