Howdy, Fellers.
Wondering what the best technique would be for smoking breakfast sausage patties. Basically, I'll be buying the ground pork m'self, adding ingredients, and makin' breakfast sausages out of 'em; however, I want to make sure when I smoke them, I don't dry 'em out. Will be doin' this on my WSM.
Temperature of smoker?
Should I smoke it as a log, then slice it, or make patties first, then smoke?
Cannot seem to find much information on this particular scenario.

This might be trial and error type of deal. I've made burger patties out of deer sausage before and all I did was start them over the heat to brown them and then moved them away from the heat to get the smoke but just made sure there was still some juice coming out of them, didn't want them dry. Another suggestion would be to make a fatty out of it... Smoke it whole then slice for patties. Nice smoke ring on each slice

Thanks, Friend. I ended up not smoking anything, and just eating what others offered. I will try this sometime when the "pressure's not on." :)
