Re: Schweinshaxe
Had to look this one up. You must be tuning up for Otoberfest. That is an interesting cook.

Re: Schweinshaxe
Haha. Oktoberfest is nice. Haxe is good with mashed potatoes, beer sauce and sauerkraut. I put the kraut in a pan under the meat. Then the fat drips in to the pan and mix with the kraut. Delicious. I cook these on 160 Celsius for 2.5 -3 hours indirect heat. Brush with saltwater after 1 hour and then every 30 min. Turn up to 250 Celsius last 8-10 min to make the rind pop and become crisp.like this:

Where are you located? It sounds good with the mashed potato's. Oddly enough, and being mostly German, I have never much liked sauerkraut. My wife likes it as her dad used to make big batches of it in a crock. And she ended up with that old crock. And I liked the looks of that beer as well on that link.

I live in Norway. Kraut mixed with fat from the meat is good. The beer is also good. Weissbier, made from wheat. Gives a fresh, a bit fruity taste. Excellent on a warm summer day.

Re: Schweinshaxe
Didn't see you were German. You are then of course familiar with wiessbier.

Re: Schweinshaxe
I am of German ancestory, not actually from Germany. But I like lots of different kinds of beer. Over here in the states there are many small craft breweries opening up all the time. I went and met a couple of friends at one on Thursday night. What part of Norway do you live? The company I work for bought a company from Norway many years ago, and that is who I actually worked for when I hired in with them. It was a company called Kongsberg Offshore. And they were bought out by FMC. So I have worked with many Norweigians over the years.

I live just outside of Oslo, the capital. Kongsberg is a industrial conglomerate. Today they are big in automotive parts, maritime projects and highly advanced weapons. Amongst other they produce a new stealth missile for the JSF, or f-35 fighter. Here in Norway small breweries or microbreweries are also gaining popularity. Much better beer than from the larger breweries. I also brew some beer myself. It's exciting to create your personal variant which you can serve your friends.
