Winter is coming.. Time for menudo!!

Out here in Arkansas, we do have the sparse taqueria or 2 and a few Mexican restaurants. Very few are even worth mentioning, let alone ordering from more than once. We have discovered a really good taco hut close by our new home, but they have a short menu. I'm happy and disappointed alike. I searched all the places for some menudo and to my surprise, nobody has it here either. I'd have figured being closer to Texas, we'd get lucky. Nope. So I bought what I needed and made a big ol' pot myself.

And after many hours and lots of patience.. Dressed with some diced onion, cilantro, and a squeeze of lime..

I made enough to last me a couple days and I will definitely enjoy it! Fortunately, the wife and kids like it as well so I won't be lonely eating it all by my onesie. Lol!

Very nice work. I’m not a fan of the consistency in the intestines, at least what I’ve tried. I’m more of a pozole fan but I definitely respect the commitment to making thatbdish right.
