I have a seafood store close to the shore here to get fresh seafood from. I bought 2 pounds of sea scallops this morning for this evening's meal.
A light brush of chipotle seasoned olive oil, a dusting of Old Bay. and on to a 500 fire on the BGE with maple chips for smoke. These will be served with leftover ribs from yesterday's smoke and fresh Jersey corn.
Another awesome day here in the House of Piney.

Imo great choice with the Sea as not a big fan of the Bay. I know a lot of people claim the Bay are sweeter and more tender but I've never bought into that but it's just my preference. I definitely like the deeper water larger Scallops , these look great !
I always hope I'm lucky enough to come across the female ( pink ) Scallop in the bunch because I've noticed a definite boost in sweetness with them, have you ??
Do you hit them with any Lemon juice in the very end SmoPin ?

I stay away from bay scallops. They're too small to deal with on a grill. As far as sweetness goes, I have no problem with sea scallops.......they're candy and I can get them almost right off the boat here.
I don't use lemon or lime juice. I use a flavored olive oil and Old Bay before I grill.
I don't cook these often, but they're a treat when I do.
