Greetings from North Carolina

Hello everyone,
Just finished my offset cooker build about six weeks ago. Learning lots as I go. Best food I have cooked in my life with that oak wood! Beef short ribs, pork shoulders so far, and salmon last night . Pic of doing first seasoning burn.
