Pork ribs over an open fire
I have really been toying with the idea of a Santa Maria grill and a South American style parrilla for a while now. I wanted to try to replicate something cooked on one before a major investment into one of those expensive jokers!!!! So my brother in law and his wife came over last night and I did just that. We had 2 racks of st Louis ribs and 1 rack of baby backs. I had some bricks behind the house so I stacked them on top of my weber to raise the grate. I was so happy with the way they turned out. I may have cooked them for 1.5 hours. I was a little intoxicated so I'm not to sure on the cook time. Also if anyone gets a chance try this bbq sauce mix I tried. Equal portions of sweet baby rays to Dr pepper. I think it's great. We also boiled 30 pounds of jumbo peanuts.

Looks great man, nothing wrong with alternate cooking methods and trying something other then the " norm " and as far as Dr Pepper goes, I love to use it in a sauce, Clear Pennsylvania Dutch Birch Beer as well.

Great Grub Mississippi Man - - - before I got my Pit Boss Pellet Pooper, I did ribs on my ECB that way and they were delicious but a tad bit drier when finished.

I put honey mustard on the baby backs like oup says he does. Next time I'm going to put another layer of bricks down.

Ha! I came across one of the Oklahoma Joe barrel cookers on clearance yesterday at Walmart and your name popped into mind. Lol! I'm a fan of Santa Maria grilling and you dont need to drop a ton of cash on one of those crazy setups. You can build one, a BIG one, using brick just like you did here for a fraction of the cost. You can even go the extra mile and mortar it all up to make it a permanent placement. We are still in the process of planning our chicken and duck coop move in the yard or I'd have one set up right now. We want to put them on the opposite end of the back for sanitation purpose. The ducks almost CONSTANTLY have standing water and it is smells like a swamp on the best days. They are about 30 feet from our back door and whenever it's opened, the smell will open your eyes too. Lol! But.. So, that's been primary focus as of lately. Anyhow, build your own and save a couple benjamins!
