Grandma's Bread & Butter Pickles

Postby Puff » Tue Feb 27, 2007 5:08 pm

This recipe was passed down to me from my Grandparents. It's been in the family forever.
16-20 medium sixed cucumbers sliced(I like them a little thick)
10 sm. onions(thinly sliced)
1/3 c salt
3 c distilled vinegar
2 c sugar
2 tbs. mustard seed
2 tsp. turmeric
2 tsp. celery seed
1 tsp. ground ginger
1 tsp peppercorns
Combine cucumbers & onion slices in large bowl. Layer with salt and cover with ice cubes. Let stand 1 1/2 hrs. drain & rinse.
Place remaining ingredients in a large saucepot, bring to a boil. Add drained cucumbers & onions and return to a boil. Boil 1/2 hr.
Pack into hot canning jars(pint jar is the best I think) leaving 1/4 in. headspace. Remove air bubbles. Adjust caps and process for 10 min. in boiling water bath.
Yeilds about 5 1/2 pint jars

I'm gonna try them in a couple of weeks. Getting ready to move, so the idea is to pack boxes and leave them packed. 8)

Someplace warmer?

I hope you enjoy them. Like with most all canned food. The longer it sets, the better it gets :D
