Hi all, (or should I say Y'all)?

I have been smoking for about 15 years, and have perfected many recipes, and working on others. I love to cook, especially smoke, as it is my passion. I started smoking with a cheap water/kettle smoker. I used it a few times a year, as it was a lot of work, and time was precious. Then I bought a Broil King horizontal drum smoker, with the seperate fire box. This was a big upgrade, and I would use this 6-8 times per year. Then, I learned about a pellet smoker. WOW! Flavour, control and easy!

I now have three Traegers, and go through about 20-25 twenty pound bags per year. I smoke AT LEAST once a week, and often 2-3 times per week.

I have also started uploading "how-To" Smoke videos on YouTube. I have a lot of recipes that I would love to share. I have learned a lot about brining, rubbs, marinades and tequniques, and I hope I can pass on some of my learnings to others. I am working on many more ideas for my Traeger, which is basically a convection oven with big flavour.

Glad to have you. Awesome pics. We just got a traeger to play around with and look forward to your knowledge about cooking on them. Definately will have to get a prime rib on there though, that thing looks pretty tasty.
