Can't catch a break!

My big Saturday plan was to roast a suckling pig and watch "I'll Have Another" win the Belmont Stakes for the first Triple Crown in 28 years.

Then I find out this morning that the horse was scratched from the race.

Then I go to pick up my pig which I pre-ordered and specified 15-20 lbs. My 15 lb pig ends up weighing 30 lbs and will not fit on any pit that I own.

Then I realize that I do not have a pig but actually have a "pig-cicle". My 30 pound pig is frozen solid and there is now way I am roasting it tomorrow even if I had something to cook it on.

At least there is plenty of Jim Beam in the house.

I hope everyone has a better weekend than the one that I am looking at!!

Put that hog in the bath tub full of cold water and change it out three or four times over 8 hrs and dig a hole in the back yard build a fire and cook that rascal old school.
Never met a cow I didn't like with a little salt and pepper.

That is what is probably going to happen.

I thought I was going to spend my weekend drinking a beer, watching a race and tending a pit. Looks like I'll be digging a big old hole instead!!

Any advice for cooking a pig in the ground? Any good links I could learn from?

DIg a 3' hole . Start your fire either with hardwood or charcoal or both. Let the fire die down to coals. Put a sheet of metal over the pit then place the pig on top of that. Then put another sheet of metal over the pig. Then cover with dirt. Wait 6 to 7 hours, then remove dirt and pull the pig out and enjoy...
Never met a cow I didn't like with a little salt and pepper.

Looks like I caught a break after all! I ended up finding a 33" Cajun Grill for $100. I did a test cook tonight to try to learn it. I'll fire it up for the real deal in the early a.m. Pics later!

Everything went great and I learned a TON!

The Cajun grill was easy to work but I do not believe the dome thermometer was correct (surprise, surprise). The pig, Larry, was done after 5 hours. The grill had to be running a heck of a lot hotter than the 250 it was reading for a 30 lb pig to be doe that fast.

Injected with 15 oz of creole butter. Stuffed with new potatoes, onions and celery.

He ain't moving around much but, trust me, he was showing plenty of personality.

Sorry I don't have a better write up but I am really, really tired. I hope everyone had a great weekend.

That story had such a sad start, but it had a happy ending (for everyone but Larry).

Thanks for all of the positive feedback. A little encouragement goes a long way!!

One of the things that surprised me the most was how much Larry terrified some of the kids. It never occurred to me that some people would find a pig to be scary.
