Citric acids and MSG part two

Ok maybe I should ask this. Dose anyone know anything about MSG's or Citric acids? A lot of the rubs I look at also contain both of these. How does the MSG enhance the flavor? What does the Citric acid do in the rub? My rub has alot of orange peel in it already. Would the acid stay though along slow cook. I'm either about to invinte the best rub ever, or have a brain meltdown think about all this stuff.

MSG or Accent is a flavor enhancer. There is debate about if its bad for you or not. It definitely makes the flavor more "flavorful".

Citric Acid is just that, it is used for that "twang" in rubs. It is also used to provide acidity, which acts as a preservative of sorts, mostly in liquids.

My 2 cents is to FIRST decide what flavor profile you are trying to achieve, and THEN decide what ingredients you need to accomplish that profile.

yea I know. Still offer still stands. Will im just going to have to play with MSG and citric acids and see what comes of it. wont be the first wrong trun i ever took.
