Does this smoke make my butt look big?

Smoked 4 butts and 2 brisket flats for the in-laws. Butts were sprinkled with a variation of Meathead’s Memphis Dust. I went with a Dalmatian rub for the flats. I was concerned that the flats would dry out so I used Steve Raichlen’s suggestion from “How to Grill” and put them in a pan, and some how some beer spilt into the pans. I used mesquite lump from Sam’s with hickory and pecan for flavor. Set the Good One Marshal to 250 and filled the bottom with water. Butts were at the top of the smoker in the higher heat and dripping into the flats below. I warped the butts when they hit ~160 it. I pulled them off at 195 and almost dropped one because it fell apart. To my surprise the flats took about an hour longer to get to the 190’s. As a side note I’m still very happy with my “Good One” as it held rock solid with no fiddling at 250 for over 8 hours.

Have you ever seen such a small brisket flat? It was donated from one of our friends that are still raising cattle on his great grandfather’s farm.

Nice cook, tell your amigo he needs a Tx bull to stand stud on his heifers it will cure that tiny brisket problem
