Brisket ?

Can I separate the point and flat before the cook? I want to make both slices and burnt ends. :D

Sure. There are lots of videos on youtube you can watch, ones that go into a lot of explanation, and others like this one that are easy to understand. Don't get discouraged if your brisket doesn't look quite like this one. They rarely do but you will get the hang of it pretty quick.

Id say leave it together for the cook. When you hit your desired temp on the flat, separate the 2 parts, wrap the flat and cube up the point to get back on the smoker for burnt ends.

I separated mine about 90% pre cook and it worked great. Do a search for my burnt ends post for pics.
