Interesting unit. Like several things about the design. Do you have any issues with grease flairs if it drains back into the firebox? Could see this say for pig juice which is a bit notorious for that.
Worst 2 pit fires I ever saw resulted from same.

Just me, would like to see a bit of a lip stamped in the steel around the perimeter to deter liquid spills to the patio. Does the firebox have a lift out basket for ease in clean out?

All around, handsome unit. I would take a crack at cooking on that.

The cooktop does not need a lip stamped around the perimeter as it is slightly dished to the center allowing any grease to flow into the fire.

The flare ups are non existant while cooking. I have cooked 100 chicken quarters, several hundred burgers, etc, at a time with no flare ups unless I scrape the grease to the fire and that last about 3 seconds.

Flare ups would only affect what is over the center sear grate since there is a 1/2" carbon steel plancha cooktop above the fire shielding it.

As for the fire bowl.... to clean just scoop out remaining ash before next cook (if necessary) with the ash scooper accessory. This step takes about a minute to perform. Then reload with your favorite choice of hardwood.

There is a ring of fire propane insert accessory coming soon.. For all the women out there. Lol

I have attached pictures of the Sterling 40 model. You can see how the cooktop is slightly dished to the center.
