Hello from East Texas

Hello from East Texas
I'm a slow learner evidenced by the fact I didn't put my intro up yesterday. BBQ is one of my comfort foods, along with bisquets and gravy, fried okra, and any cobbler.
Our family has been blessed to visit almost every state in the country and I do believe East Texas has the most BBQ joints to choose from. It's just a happy coincendence we now call it home.
A couple of years ago we lived in the Pacific Northwest and I got hooked on smoking fresh fish. Catching and smoking you're own salmon, steelhead, and sturgeon is heaven on earth.
Now that we're back in Texas our family is enjoying the rebirth of brisket q's here. I've got a long ways to go but am excited to be a part of a forum of q experts and look forward to learning.
I have two pot webers and a smokey mountain gas smoker. Now that I'm in Texas I guess I'll have to find an all wood smoker.

Hi HOF..welcome. Now we went to a cookoff in E. Texas one time (Terrell) where the local slabsavers and doughnut munchers had formed up a cookteam. We was parked fairly close so I mosied over there to say howdy do when I noticed their fire was smelling sorta funny. Got to investigating the situation and come to find out they was cooking with Pine. I say..where did yall get that wood? They say proudly..Some feller give it to us free. Good Lawdy Miz Claudy...that hit my funny bone like a ton of bricks. Time the word got out think every cook in the place made the rounds to get a whiff of that fire. Tell us that aint a common practice in E. Texas:)
