I have always used a Weber for grilling it hot. Also I fire up the standard box end smoker if I want to add a little smoke flavor.............I always smoke my meats for about 2 hrs then throw them on the grill for some cooking action....

I always have a pork shoulder, cause the family is always around the corner. I also like my beer can chicken on the pit and a rack of ribs. I have only done one brisket but saturday, we are getting up early and gonna cook a brisket all day. I cheated on the first brisket I cooked and cooked all night in the oven about 200 degrees and then the next morning I put it on the pit and it actually was a knockout and I didnt have to watch it all day.............Yeh I know its cheatin but It was a shot in the dark......
