I always cook fat side down. Everyone is different. I never apply sugar products of any kind while I’m cooking, same as above; everybody has their own thoughts. That brisket looks like you could cut it with a plastic fork

I normally use that hog waller honey on pork butts but i am out. And I had plently of the Texas Pecan. It isn't bad stuff but it is high in sugar. And you know what sugar likes to do. The brisket did turn out good, but the pork did as well. The pit ran flawlesly as always, and the operator didn't crack a beer until the briskets were done. That always helps as well.

Yes, we will be leaving Wednesday morning. We have some friends from Grandview TX. that we will meet up with at the JCT of 79 and 20 just west of Schreveport. I pick that 79 up at Carthage and run it up to 20. We will spend the first night in Vicksburg MS. Lots of Civil War history there. There is also a open air bar and grill on top of an old bank building downtown Vickburg that we go to for some cold ones and a meal and usually this time of year a basball game. Then its on into Talladega on Thursday afternoon. We'll leave there Monday morning.
