Bath Time

The ole girl gets dirty just sitting around. And since I am going to bring her to life in the morning she likes to look good. It’s time for my annual travels for race season, and I need a little BBQ to take with me, and a little extra for the freezer. So it’s 4 pork butts and a couple of small whole packer briskets on tap for tomorrow.

Texas Pecan on the pork butts this time. And light dusting of spg, then a heavy coat of 1836 on the beef.

Looking good. If you’re in need of a QC guy I can be in Cypress by the time they’re cooked and rested ?

Noticed you flipped the butts. Is that part of your usual method and if so how often do you turn them?

No it’s not something I normally do. But when I cook them on the bottom rack I like for them to be fat cap down. And I failed to start them that way. GTR, not sure if you have used that Texas Pecan before, but it is pretty heavy on sugar. And I know you know sugar likes to char up a little bit. So I am also cooking a little slower today than what I normally would. The briskets are only running about 145 right now. But they don’t look to the quality they were advertised and sold at. I bought them up at canyon lake over the 4th. Supposed to be choice but don’t think so.

Thanks for the reply. Sugar can be finicky at best. Your briskets are probably low choice. Last I looked there were 3 grades of choice. Choice +, Choice and Choice-. Funny they eliminated 2 very low grades but add 2 in the Choice grade and 1 in Prime grade. :dont:
