Riskrem Again

Postby OkieGal » Mon Feb 21, 2022 10:13 am

A couple of years ago, Norway Joe introduced us to a Norwegian Christmas dessert - Riskrem.
I was fascinated with this, and made it for our Christmas dinner in 2020, including the hidden almond with a little prize for the finder.

OMG, I LOVE this! Unfortunately, the rest of my family was like "Eh, its' okay" :x

So - no Riskrem for Christmas 2021 but I was determined that OkieGal would have some, once the Holiday Season was over.
That time came this weekend, and it is just as wonderful as I remembered.

I made the Risgrot (rice porridge) on Saturday and had a bowl with cinnamon sugar and butter for dinner. Then I had another
one with buttered toast for breakfast on Sunday. :D
Sunday afternoon I used the remaining rice porridge to make the star of the show: Riskrem (rice pudding).

This stuff is to die for! I love it as the porridge and I love it as the pudding.
I made a raspberry coulis as a topping for the Riskrem. It's good with that, and also without any topping.

I will add the link to the recipe. (I am using the shortened names for the dishes.)

Thanks again, Joe, for bringing this little gem into my life! :D

Ooh. That's fantastic. I love risgrøt and riskrem. We usually only eat riskrem during Christmas but occasionally as a dessert in a Cafe.

Risgrøt is often a dinner meal when we want something tasty and easy. During Christmas we make it as in your recipe, but the rest of the year we use ready-made that we heat in the microwave. Now i feel the crave.

Another great dish I love is rømmegrøt or sour cream porridge. You might try this if you like:

This recipe is great. I would use home made sour cream as stated in the recipe. Not heavy cream. We use store bought sour cream but your store bought sour cream is different than yours so go for the homemade if you can.

I will definitely try this! You mentioned it once before, but that recipe said be sure to use "35% sour cream", and I haven't been able to find that.
I will make homemade sour cream, as in this link. I had no idea it was that simple.

Thanks! If you love rice pudding, you will love this too. 8)
I am sure you can make it, you should give it a try.
Its not hard, just takes a little time. I set my Timestick to remind me to stir and/or add milk every 5 minutes, until it has cooked for an hour. The rest is easy-peasy. :D

Oops, my bad!

Years ago, I hung out on the CharBroil forum.
There was a poster there who went by CaptJack. Tall, blond guy, former military, from Texas, favored the huge "Thumbs up" sign.
I thought you were the same guy.
Sorry about making the wrong assumption. :(
