As far as my Easter Menu goes, I couldn't find the Picanha that I wanted so I got some Bone-in Country Style Ribs from a Boston Butt to smoke over some Kinsford Briquettes - - - "pics later, Y'all"
No Pics on this "FOO PAAA" (aka Mess) - - - decided to do them in the Oven and they tasted pretty bad - - - I seriously think that it was the "cut of meat" and not the process - - - oh well - - - maybe next time

Alone this year, son had to go to his in laws today. So I rode out to Navasota yesterday to visit with them. Filled the freezer full of meat for the kids. Wife is in New Zealand on a trip. So headed to the lake this morning. Went by the cemetery to see the folks. Now some R&R.

My ham went completely nakid, just a chunk of cherry wood on the Weber.
I miscalculated my time needed, made ‘em wait an extra 30 minutes.

I feel your pain. This 18 Lb monster went 1 1/2 hours over. I pulled up at the In-Laws at 11:50

At the station, I learned Friday that we had some firing of employees and the one who was the supplies for Easter was one of them. So I took it upon myself to go back to the grocery store. OK with the pork loin which I stuffed with mushrooms onions parsley, a little garlic in basket, weaved bacon around the entire loin and added a sweet mustard glaze. Honestly I was pretty proud of it. Difficult to tie considering that It was stuffed basket woven and somehow having to tie something that was like trying to handle a greasy pig. So slippery. I ended up freezing it for about an hour to harden it up a little to get it done. Before and after pics.
