Free Aquavit - awesome day at the office

As some of you know, I rent my office space at Norways biggest aquavit producer. Today is the day of the Aquavit and we got free samples of different varieties.

Also had a "How do they do it" show from the guys that make the barrels. Aquavit is stored on oak barrels for up to 12 years or more. Some are sent by ship past equator and back for extra taste du the rolling of the ship in the waves and different humidity.

The cantina lined up a big table with different herring dishes, which are excellent with aquavit.

An Aquavit expert held a teaching lesson about the different aquavit styles while we were eating.

Very cool experience I’m sure. Have always been surprised by the different nuisances achieved with the aging process. 12, 18 or even 24 years of aging render very distinct products.

I have heard the process you speak of called "sea aging". There are other ways to perform the same agitation on land using windmills and other wind driven devices to provide the agitation in the oak charred barrels. On other occasions charred pieces of wood are placed in the liquid to provide rapid ageing.

Yes. Many tricks they can use. However, they have tried a lot of high-tech solutions to create the same taste with keeping the barrels on land . None was able to create the same taste.

Depending on the style of the Aquavit, they use different barrels. New, charred, barrels used for Madeira. You can get both clear or brown Aquavit depending on the storage and aging.

The problem with aquavit if you're not used to it is that when you start to feel to first or second glass you know there are already a few more waiting in your bloodstream.

Wow that is a way cool experience.
I have long had a facination with what microorganisms can do for us.
Then of course what we can do to improve their work, sometimes one has to use a ship (or pickup).
