Just wanted to give all an East Texas shoutout and to say howdy. I am in the Pittsburg Texas area and am new to smoking. The place I bought has a old homemade smoker that has no grate in the firebox, firebox only opens from the end and the chimney is a massive 2 inches tall, reason I call myself creosote. Hope to learn how to really put out some true Texas bbq. Will post pics of the beast when I get a chance.
