Finally Jumping in the Deep End

I have been known to visit this forum from time to time but never got involved. Today I decided to jump in the deep end and get sauced with every one. I have a Pit Barrel Cooker that I use for most of my cooks. I do have a natural gas grill on the porch for quick grilling. I'll eventually end up with an offset at some point. Sometimes my PBC is just not big enough. The things I smoke the most are ribs, fatties and pork butts.

Welcome. Those PBC’s are intriguing.

Question - when you hang ribs have you had issues with the ones near the fire basket burning?

Yes, it can be an issue sometimes. When selecting my racks at the meat counter I search for the shorter racks so I don't have that problem most of the time. Depending on the rack length I will also hook below the 3rd bone vs the 2nd. Some people cut their racks in half to hang them which eliminates the over cooking problem but I think will effect the moisture of the rack.

You'll have to make 2stops. Lufkin BBQ has good BBQ and they made the Top 50 because of their Fried Yeast Rolls that are to die for . If I just want meat , I'm going to Bodascious .
