Hi everyone..

New to offset smoking (about to build one) but not new to BBQ.

Been smoking and cooking up for last 10+ years on Weber kettles (I own about 7 Webers)
Mainly Pork shoulder, Lamb Shoulder, a few attempts with Brisket (not super results)

My wife loves buffalo hot wings (so I do my part and cook them up for her..)

I love cooking, all kinds of cuisines, but BBQ is No1.. I actually cooked up our engagement party food.. 3 Webers each cooking two pork shoulders for 9h (Pulled Pork sliders and rotisserie beef roast)


Regarding the offsets.. rather than buy a cheap-ish one, id rather build one.. so.. here I am.. searching all the forums on ideas and methods.. plus watching YT..

Currently my plan is to create an Octagon shaped cook chamber (like Allen on YT)
Cube fire box, with maybe a 45* cut out at the front to ‘match’ the octagon.

Cook chamber about 700mm (27.5”) long & 420mm (16”) dia.
Firebox 400mm (16”) square.
All made with 6mm (1/4)
100mm (4”) chimney tube *not sure on the length yet.
Standard flow with tuning plates...

It’ll probably take me a while, still learning MIG, but fun to try! And should be cheaper than buying a mid range smoker over here.. (reasonable mid range are selling for about $1,500AUD $1,000USD)

But enough about this. (I’ll add a new thread on the build section in time + photos)
