Hi guys!
I have started learning Texas BBQ art, in the country, where it is not popular at all. Hello from Warsaw in Poland :)
My dad told me how to smoke meat, but polish way ( really low temperatures, like 60-80 C), but I am experimenting on my home made smoker with Texas Style smoking.
By the way, I want to ask You a question. I have a classic polish smoker, which is made of bricks, and maintaining fire is really hard on those. I have to put a piece of wood every 3-5 minutes. How often do You guys put wood on the offset smokers?
Can You recommend me certain offset smokers or scheme from which I can build one, as I am going to buy myself one, to make the bbq easier.

Welcome from Texas! Every offset runs a bit different. Mine has a 36 inch by 72 inch cook chamber with a 24x36x24 firebox that is undersized and poorly placed. 6 inch smoke stack is 48 inches tall and also poorly placed. Whole unit leaks smoke badly. Once I have a good coal bed and am up to temp, I add a stick to two sticks every hour. Again, each unit runs different and it really pays to study design characteristics. We have several here who can help you select and/or design a top notch offset!
