You all have heard of "Peach Pickin Time In Georgia", I'm sure.
Well today is Salsa Making Time in Texas ?WHY? you ask?
BECAUSE I"M OUT OF SALSA
This time I used The Arlington Outlaw's Secret Recipe known only to me and my dozen or so friends that I've shared it with. However, I am canning this and I won't be attacking it with Chips just yet. If Spring ever gets here, I'm gonna make up another batch of Roasted Salsa using this recipe. For those who have never had the JOY of washing, chopping, sterilizing, sweating, mixing and tasting this multitude of Veggies for a solid 2-1/2 hours, you don't know what you've missed.
Nevertheless, I got 6 pints and a "smidgen" out of my efforts and I'm happy with the outcome.
First time to use Tomatillas and Cumin and I ?may? have overdone the cumin but I'm only judging from smell and not taste so later I'll know for sure.
Of all the Kitchen Chores that I do, I DESPISED chopping fresh Cilantro more than any of them. GRRRR

OK, me and "the smidgen" are gonna have a little meeting later after it cools down a tad.

Capt'n you nailed it but I didn't have time this time I was out of Salsa and I just didn't have time to Roast them - - - ROASTING ALL THE VEGGIES IS MY FAVORITE WAY to do Salsa and that's what I'll do next time but Life got in the way today .
