The Hickory/ Pecan firewood puts a heavier color on them . You can’t really see it in the pictures but those ribs were a DARK Maroon. So glad to have my old Pit going again. Thanks all

However, for ME, I will not purchase the precut flat and Point again; it just wasn’t the same

I have three briskets thawing in the fridge right now that are scheduled for a smoke bath Saturday morning. I was asked to cook for my neighbors daughter who is turning 16. She likes my brisket for her street tacos. She has used them before for fund raisers.

We cook the flat only for competition but I start with a brisket in the 18/20 lb. range and trim down to about 6 to 8 lb.
