They are both dialed in 250 and holding nicely. Couldn't get the 3rd brisket on though, just not enough surface area left for the smoke to rise. Been there and done that.
Last nite I ended up using the finger test. Thought those butts should be done, but the instant read said no. So this morning I calibrated it with boiling water, off by 20 degrees! Should have done it when I calibrated the thermometer for the new-old cooker...that one was off by 50 degrees.

Both cookers performed well. Briskets resting after 6.5 hours at 250* when I foiled 'em, and then ramped down to 210*-215*.
The Imperial Kamado (hereafter referred to as IK until the wife can come up with a name) holds temp about as good as Einstein, ramp down is about the same. Einstein does gain temp much faster though. Started them at the same time splitting a hot chimney of lump between them. IK took about 5 minutes longer to get to temp than Einstein. (15 minutes for Einstein, 20 minutes for IK )
So after a 15hr cook with the butts, two 8 hour brisket cooks, and a 2.5 hour meat loaf (I was playing with the vents to see how they affect the IK) I still have enough lump left over between the two to cook the brisket. Not too bad for a 20# bag of mesquite lump that goes for $9.00.
