A Fatty in the process
Fired up the Smokefire for the first time since before the winter. Are going to smoke a fatty.
Filled it with cream cheese, bacon sautéed onion and red pepper. Cheddar cheese and jalapeños. Seasoned with SPG. Bacon weave with Hogwaller honey. Going on the Smokefire in a few minutes.

This is interesting. Just when I put the fatty on the smoker we got a cold heavy wind. You can hear the wind howling around the house.
Smoker seems to hold the temperature rock steady at the set 225 F.

Got a little problem with the weather so had to finish it in the oven. Got an hour in the smoker at 220, though.
