Pulled pork in the process

Just put the butt on in the Smokefire. Will be used in pulled pork tacos in the evening. Meat was coated with a layer of mustard and rubbed with SB Pecan.

Temperature set to 225.

Also threw in a few raw eggs that will end up in an egg salad.

I will follow Meatheads routine for a perfect pulled pork, with a few tweaks:

You set up a lawn chair and sip a cup of coffee as you put the meat on in the wee hours ( need a few cups of coffee, it's 32F outside).

As the sun gets high, you switch to cool, refreshing beer.

As dusk approaches the fat melts and the connective tissue dissolves into gelatin, your guests begin to arrive, and you switch to bourbon.

Going to tweak the last step a little bit. No guests and switch to aquavit.

That sounds like a pretty perfect process. Looks like it’s going to be good too.

Only concern is that whole beer before liquor thing

Ok. I was happy with the outcome. Not very often I make pulled pork.

Bark was nice. Meat was tender and juicy.Pulled at 203.

Made some softshell tacos with homemade salsa and guacamole.
