A good day for ox tails today.
I rubbed them with SB Campfire and they're on the pit now at 250 with a mix of apple and mesquite for smoke. I'll give them around 2 and half hours to get some color and then I'm going to pan them with rich beef broth, cover tightly, and let them braise for about 3 hours.
Fun day in the smoke.

AWESOME is right around the Corner - - - - the more smoke the better the tail - - - anxious to see the final plate
The only time I've done these was in a Stew and it was good so I'm sniffin this real close for a future ?maybe?

I’ve had oxtails in Caribbean food but never cooked them. Your method sounds really good

Interesting and sounds good. The only oxtail I've eaten is in oxtail soup, which is great.

I also love oxtail soup, Joe.
Stage 2:
They got some nice color.
I made a beef broth with Better Than Bullion and added it to the pan for a brazing liquid.
I covered it tightly in foil and increased the pit temp to 275. I'll let it ride for another 2 and a half hours.

I put the pan juices in a fat separator, skimmed it off, and used that for the gravy.
