Saturday pork butt and breakfast fattie.

Postby k.a.m. » Mon Jun 14, 2021 10:55 am

I bought some of the Members Mark charcoal and wanted to try it out this weekend. I based this on Rorschach's post on the charcoal. Most members will not know but Robert and I go way back and in my opinion he is a connoisseur of charcoal and lump. Robert has brought this to a whole new level of what is good to burn and what is trash. The charcoal did not disappoint and is about as close to Royal Oaks Chef Select as you are going to get.
So onto my Saturday cook.
The butt rubbed down with Texas Sweet Pecan and topped with SPG.

When I got the butt going I cooked a ham, onion, jalepeno and cheese omelet.

Then came two lbs. of Jimmy Dean regular sausage and bacon.

The fattie went on the weber Kettle indirect heat.
Here it is resting after an hour of cooking.

And sliced. We place a slice on a hamburger bun and it is a complete breakfast in your hand! :D

A little later the butt got wrapped.

Then came the ABT's

The butt finished rested and ready to pull.

Nice clean bone.

Great looking feed as usual.
I haven't made Roxy's Mustard Sauce since my daughter graduated from college. Gonna have to make it soon. :D
