lol .. she's good she said the only thing the Bronco needs is a cover and a name..

What did you use for fire? "Bronco Billy' looks to be quite mobile with those wheels on it.

Ribs look spot on!!!
A couple of questions if you don’t mind.
Is it easy to control the temperature?
How did you hang the ribs ?

So the Bronco Drum Cooker is very very easy to control and maintain temps, I fill it about half full of
B&B Lump bury the wood chunks and left it come up to temp. I honestly dont worry about temps when
smoking, so the guage on the front is all I use and when it hits 275 to 300 I will dial the Bronco back to
225 to 250 and load it up and that thing will sit there for many more hours than I have needed yet. When I am done
I shut it down and have always have a nice amount of lump left for the next cook.

The Bronco comes with 3 rods that attach to the inside rim of the drum, and you also get 9 or 10 hooks. I hooked
the ribs between the 2nd and 3rd bone on the meaty end of the racks and hooked the ribs on the rods. The end of
racks almost touch the coals, but after the initial 3 hours of cooking the racks looked awesome with the exception of the very
tip, it was tuff, I expected to loose the first two bones on the thin end but only lost one, so I was impressed. Also I did not
remove the membrane, but it cooked up nice and crisp.

The smoker held temp for 5 and half hours with zero issues. I never had to touch it once, I love that. I think you could do more, but I will
max my rib cooks at 6 racks at once. I see some people slicing their racks in half and using the diffuser, but I love that flavor that comes
when the drops hit the coals.
