Slow Smoked Beef Cheeks

Postby cowboydon » Wed Jul 21, 2021 12:12 pm

Had a taste for some barbacoa and usually I just throw my beef cheeks in the crockpot with a couple of spices and half an onion and cook it tils they are done.
But after getting some coffee in me, this time I decided to slow smoke the cheeks until they hit 165 and then panned them with some beef bone broth and sweet onions and let them cook until probe
tender.

They even had my boy dog begging for a taste.

My wife just asked me.."where you going with that crock pot?" I don't think we need that thing any more after tasting this.

That looks fantastic. Bet that’s a great flavor combo too. Been doing a similar cook method on ours and love the results and addition of smoke to the party. Struck out on finding cheeks the last couple of trips to the store so settled for chuck this last time. Still good but cheeks are definitely more rich and flavorful

I wonder how those would work if you cooked them "BUrnt End Style" :?:
