Pork belly burnt ends and wings

Finally got the time to fire up the pellet smoker.

It's been a long time since we had pork belly burnt ends so it was about time. Bought a slab yesterday that I diced up. Rubbed them with a honey bbq rub and threw them in the smoker for 3 hours at 250. Then I put them in a foil pan and drizzled over brown sugar, honey and butter. Covered the pan with foil and back on the smoker for two more hours. Finally they went into another pan with a mix of bbq sauce, apple juice and a little shriracha sauce and back on the smoker fir another 15 minutes. They came out juicy and super tender with lots of flavor.

Also made a batch of sweet and spicy chicken wings. I use a weber recipe I found online which I like a lot.

Served with mashed potatoes, pommel noisettes and city bread.

A very filling, flavorful and tasty dinner. Couch is next.

Beautiful, weather is getting great for pork bellies and I just love doing them, almost bullet proof. Have to say that skillet bread looks great.

Joe, that looks fantastic!

It makes me curious though. What do your friends and family up there think of your Texas style cue? I like to imagine that it's a pretty serious departure from their norm.

TX1911: Thanks. My family and friends love it. As you say it's very different from what we usually eat. Very few people here do real bbq, but luckily more and more are. That's a good thing because it's getting easier to get quality rubs and sauces. Unfortunately we can't get Sucklebusters here, but Malcolm Reeds rubs and sauces are now available.

As far as my cue I serve it to our friends and family. They're asking if they can come for a bbq dinner. Wife and kids are big fans. Even my mother and father in their mid 80's love it. They are raised on traditional Norwegian food that is almost without spices except salt and pepper like the bbq taste. Also the hot stuff. I gave my mother a jar of jalapeno jelly I made. She ate it within a short time. Used it on everything.
