Pork belly burnt ends in process

We are getting some good friends over for dinner tonight. They don't do BBQ but love it so we usually serve some form of BBQ when they are here. Haven't served them pork belly burnt ends before so we're going for that tonight.

Pork belly burnt ends will be served with mashed potatoes, grilled avocado with onions, dill, sour cream and cured ham. Are also making some caramelized onions.

I usually follow Malcolm Reid's recipe which I like.

Have smoked the belly cubes rubbed with hogwaller honey rub for 3 hours on 250f.

Have just panned and covered in foil with brown sugar, dairy butter and honey. Giving them another couple of hours before glazing.

Thanks. These came out great.

Glazed the ends with a mix of plain bbq sauce, apple juice, some mashed apple, a little sugar and a little Sriracha.

Not the best pictures of the finished cooking.

I'm sure our guests liked it too. We had about 9 pounds of fresh pork belly to 5 people and there was no leftovers.ImageImageImage

The onions aren't difficult, just take time and patience.

Here's what I do:

Slice the onions thin and add them to the pan with a little oil or butter. I start with heat between medium and high. Stirring often but not more than they get a little char on the edges. Then I turn down the heat to low. Add a couple of tbsp of water and a couple of tsp of sugar. Just let them cook on low heat for a couple of hours. Stir occasionally. Keep an eye on them so they don't dry out. Add a little more water if they do. At the end I increase the heat a little while stirring and adding a tbsp of balsamic vinegar. The vinegar dissolves the residue at the bottom of the pan. You want this in the onions.

I think these onions cooked for about 2.5 hours.
