Hog Wallered, Pecan Smoked Pork Belly

It had been far too long since I last fired up my patio Gator Pit, so today I brought her out of the shop and got her warmed up. I’ve had a pork belly in my freezer for a few months now, and Joe’s post a week or so ago reminded me that I needed to get it done. I scored the top, then seasoned it up with Hog Waller and put on the pit at 250 for about 5 hours. I then pulled it and transferred to a foil pan, poured in a bit of apple juice and covered. It cooked for about 3 more hours till it reached 201. I also cooked up a pot of Sucklebusters Pinto Beans and Mrs Tex made a pan of Mexican Cornbread. I hurt myself on this meal. In hindsight, it probably wasn’t the smartest decision before I go to my bi-annual doctor appointment tomorrow for blood work! :shock: :lol:

the thing about those blood tests I have learned over time, there is always room for change for the good or the worse...
I always tickle the nurses when I go in and announce that Dr. so & so needs to see me, not that I need to see the Dr... :D
