Clear Blue Smoke A’ Roll’n
For my favorite East Texas Native stuck in the hustle and bustle of North Texas. Putting on a nice brisket with a 1” flat tip I found at HEB for $70 and one of their $.97 Boston Butts. I’ll smoke them until dark on the Big Dog and then “ KAM Pan” them in the oven at 225 until they reach temp or Old Man probe test.

That should work out ok. I am slowly getting restocked from my last big cook. Picked up a prime brisket at Costco a couple weeks ago.

You could cut it with a plastic fork. My InLaws are in their 90’s and Pop is a meat & potato guy. Mom has gotten where standing at the stove just kills her. I chopped brisket, sliced brisket, chopped pork, and even got a few slices out of the money muscle. I vacuum sealed in small individual qt. Bags so all she has to do is drop a bag in simmering water. I hope it helps her because he fusses when she doesn’t cook.

The brisket is beautiful! That was a wonderful thing to do for the inlaws - I'm sure they really appreciate it.
