If the Butt finishes early keep it wrapped and resting in the oven on warm or a cooler wrapped in an old towel.

That is a nice meal. I’m with you on running butts at higher temps and not wrapping till you get the bark you like. No need to baby sit. It can handle it just fine

Once I seal the pans And put in the oven I’ll turn Brisket and Butts to 325. Being a backyard cooker with no contest rules, this produces the best BBQ I’ve ever made. 5 or 6 hours on the stick burner is plenty

Pork can be cooked in different ways. You can use a slow cooker, or put it in the oven to braise it. The method you use is dependent on what you are trying to achieve. You may need to get a thermometer to check the temperature. If you are looking for pulled pork, you will need to cook it for about 5 hours on low in a slow cooker, or about 3 hours in the oven. You will have to check the temperature every hour or so to make sure it is not cooking too fast or too slow. There are plenty of good recipes on how to cook pork out there. Just make sure you are using one that spells out how to cook it to the point where it is tender enough to be pulled apart with your fingers.
