Great Weather, Time To Smoke

Beautiful day here in south NJ. Time for smoking. :D

Beef round roast on the pit at 250 with some hickory smoke. Rubbed with SB 1836.

Going to let this cool, refrigerate, and slice for sammiches later this week.

Life is good! :D

Rambo,

I went to 128 IT and pulled it and let it carry over uncovered until it cools enough to put in the fridge. I've done this before, and it was a perfect rare to medium rare when sliced. I'm slicing this deli thin.

I'll post pics when I slice it.

I never thought of doing that and I don’t have a slicer. We always do those in a big cast iron skillet with brown gravy, large diced potatoes and carrots. I’ll price a deli slicer and might give this a whirl

Here's my slicer - nothing fancy and about $100. It does a decent job. I sliced about half the roast for dinner tonight. It's sliced with the grain, but still tender because the slices are very thin. We're just going to serve this with gravy and roasted beets.

Going to be a fine dinner after a weekend of hard yard work. :D

Pork butts might be tough to slice since they're basically falling apart at the end of the cook. I have separated and sliced the money muscle.
