Russian roulette with poppers

So what's the secret with softening of the pepper when it is being used with bacon wrapped chicken? We used jalapeños, Serrano and red peppers.

The Serrano was stupid hot. Just about blew up my belly much worse. So do you cook them beforehand?

The only thing that I can tolerate is Jalapenos whose veins and seeds have been removed and then I par-boil them for 2 to 3 minutes. The par-boiling also helps the bite thru with all of the fillings and bacon wrapping. Just my own preference, however. :dont:

De-vein, remove all the membrane and seeds, and soak in water for about an hour.

I like Pablano peppers best. Mild heat and a great pepper taste.

I only use Jalapeño but that certainly doesn’t make it the only thing that works. I also devien and get the membrane out. I cut the peppers a different way and all of my stuffing stays in.

If you cut the top off a jalapeño, hold it tight in your hand and insert an oyster knife from the top and rotate, that will get most of the vein out. Oyster knifes have blunt edges so no real worry about cutting yourself, holding it tight will support the sides and help prevent popping out the side.
If cutting lengthwise, scraping with a spoon will get the vein out

Some peppers are just bastards and will be hot no matter what you do.
