Ribs, pork butt, and brisket trimmed. Ribs and brisket are seasoned, wrapped in plastic wrap, and in the Fridge. Pork Butt injected with Tony’s Creole Butter and in a huge Zip Lock bag filled with Pineapple Juice. It’s going to be a fine cook

We settled on biscuits and a can of Glory greens.

Gonna do a smoked Tri tip, potato salad, deviled eggs, Mac n cheese and green beans. Not sure about dessert yet. Maybe grill some peaches and a scoop of vanilla on top with some hot honey drizzle. Yep, talked myself into that one just now.

Clear Blue rolling earlier this afternoon. Now in KAM PAN at 170 in the oven. I’ll get up at 4 and start a chimney of charcoal up for the Baby Backs. Add wood, the beast will settle down by 5:30 so I can put the Baby Backs on to be ready by 11:30 I hope. It’s a true challenge to coordinate cooking times

Hope everybody has a great weekend, beef back ribs this afternoon and a spiral sliced ham tomorrow , deviled eggs tater salad no telling what else
PB AustinLX, Weber Performer, Weber E310 , 250g trailer pit , 36" cowboy grill, bunch of other ways to burn food.

Anybody smoked hard boiled eggs? I'd like to try deviled eggs that way. Suggestions on how to accomplish it?

All I can think of is to make them up and smoke them gently; you’d probably have to serve while warm

Googled it. Raw eggs on a smoker for 2 hrs at 225 then make them up. Good thing I'm smoking tomorrow so convenient. 1 dozen jumbo eggs please.

I’ve done this method. I would suggest rotating the eggs every half hour or so. As the grates heat up it causes a hot spot that burned a couple spots on the whites.

Yes but once the fire gets going it’s my favorite time of the cook. Smell of the bbq wood burning, so peaceful outside with a hot cup of coffee waiting mr sun to wake up
