Big Monday lunch, a pound of Point in the fridge, and 9 vacuum sealed packages just right for me and sherry headed to the freezer

Thank You. Seasoned pecan and, FYI- that is 4 hours of smoking and then panned. The flavor was great and it didn’t need anymore smoke

For me, I’m old and set in my ways. That doesn’t mean they can’t get good brisket from a pellet grill or an Egg. And look at me now; I’m cheating every time with the KAM Pan but look at that 4 hour smoke ring

Here is the finished pics of the ribs and brisket.
The brisket was everything I hoped for.

The ribs were very tasty but I left them on probably an hour too long and were a bit dry but they still ate good :D
