I did a freezer dive last night and found two racks of meaty baby backs. Rubbed with Heath Riles Peach and on the Assassin at 250 for a little over 4 hours with some apple wood chunks. Sauced with Sweet Baby Rays. I should have brushed the sauce out a bit better and let it set a little longer, but I was starving.
Turned out good.
