Fat side up here. But I cook on a ceramic. Only cook packers.

I cook fat side up on my offset but my general advice is don’t be afraid to put the fat towards the heat. It protects the meat.

Fat side down always for me. It is just how I roll lol.

No right or wrong way.
Choose the path that works best for you and makes you happy with the results.
Some times I pan my briskets others I wrap in butcher paper. Sometimes I have to wrap in foil. I like my pork butts fat side up go figure.

Fat between the meat and the heat so it is up on my Fast Eddy and down on my Pit Boss.
You of coarse could do it differently but appreciate letting me know you're using my pits......
