Spatchcock chicken

Trying to do it on a traeger at work. I want a crispy skin but want a Smokey flavor. Do I go hot and take off at 45 minutes or go full smoke for 4 hrs then try turning it up for a little while to crisp it up? Jerk chicken and a Buffalo rub chicken.

We always cook ours at 350°.
I use Tony's on it and prefer not to sauce if I want super crispy skin. If I sauce it usually gets a bit soft.
We use Pit Boss competition blend pellets from Walmart.

Starting with a 5.5 lb. bird about 1 hour to an hour 15 minutes.
I start checking the thighs at the 45 min mark.

Man that was quick. Skin is crispy forgot the adjust for the high temp outside -100* but it will fill the belly

Takes me back to when my Grandpaw used to grill chicken halves for everyone AND I haven't tasted Chicken that good since. :salut: :cheers: :chef: :texas:

I loved the Buffalo rub. Better flavor than the jerk and I'm a big fan of jerk.

It's amazing how quick a spatchcocked bird cooks. :shock:

I do this with turkey every Thanksgiving. 15 pound bird at 325. Takes around 2.5 hours.

Your cook looks good. I would definitely belly up for a plate. :D
