I'm just adding some liquid into a pan, bringing the temp up to around 165 and wrapping it like a brisket.

Had a ribeye thawed out I needed to cook. This is the first go with the new grill grates. Seasoned them with a raw onion. Saved half the steak for a 2nd round. These I get from the meat market in Tomball and have them cut em a little thicker.

I didn't even get halfway through that steak. But it was a nice way to start the day. I am pleased with the quality of beef I get from this place. Most of my beef I get shipped in, this place has nice stuff.

We did chicken leg quarters. I still cannot get the skin right, and I don't think it's me. It's the chicken. Skin is soooo thick that it doesn't crisp up.

Pull it back and scrape the excess fat off, season at will, pull the skin back in place.

I'll take a look next time, but there wasn't much fat...skin thick, tough, like supermarket tomato skin.
