Labored the Day

I spent my Labor Day smoking a ton of meat for the freezer. It all started when Kroger put Choice Packer briskets on sale for $1.87/lb with a limit of three. Yea, I bought 3 of them. :lol: Anyways, if I’m going to fire up my trailer pit stick burner, you better believe I’m going to fill it up. In total, I smoked 3 briskets, 2 racks of Spares, 2 racks of beef plate ribs and 2 pork butts. Today I’ll get it all vacuum sealed and packaged into meal portion quantities and into the freezer it will go. I didn’t get hardly any pics, but the smoker picture is just the left side. The right side was full too. The star of the show was of course the beef ribs. They just come out so dang pretty. :rose:

Wow, those beef ribs are to die for. I started cooking bigger quantities and vacuum sealing meal portions. I just drop the packages into a pot of hot water and let it get warm. Papa Tom told me on the thread not to let the water boil however. It’s great at 5pm when you don’t know what’s for supper

To be honest, I typically reheat mine in the microwave. I just re-heat using the defrost function and flipping over a few times. When the bag starts to inflate, it's ready. Always tastes like it just came off of the pit. I always keep brisket and pulled pork in the freezer. Makes for a quick, easy good meal. It's also good to take along in the camper on weekend trips. :D

By the time I remember how much work it is, I’m usually elbow deep in brisket grease and just have to power through to get to the end. :lol:
