About three pounds, Saint Louis trim, SB Competition rub. Only took about three hours on the Kamado-type, due to some strange barbecue sorcery, which might have been the use of briquettes. Apple and cherry.

Strange sorcery indeed: Temp held rock steady at 275°. Half an hour before taking them off, they got a light lacquer of Stubb's sauce.

(Not seen: pickles and lettuce slaw sides!)

Came out really good, easily ripped off the bone with your teeth, but still some chew.

We can usually do ribs just fine (my vegetarian cousin would inhale them). It's chicken that drives us nuts.

It's always a good thing when I don't have to fuss with the rig during a cook. It only needed 2 small adjustments to keep the temp steady. As Sailor mentioned, using briquettes (along with some lump) may have been the major piece of this magic.
We managed to save some of it to freeze. :D

The Wiffy mentioned last night that she could sense a touch of Fall in the air.
I was sweating like a stuck Hawg yesterday while cooking those Ribs and we've had highs in the 80s everyday this week.
I don't know how she could predict the weather laying in bed with the AC and Fans on all day and night. :dont:

It got chilly here all of a sudden, boom. But we normally keep the a/c in the bedroom until November. You never know!

I could go for some winter temps right about now.....

Fall has been surprisingly pleasant, but winter is my jam!
